OUR STORY

At Poquitos we strive to present delicious Mexican cuisine prepared with ingredients that are the best of both worlds—outstanding local meats and produce plus unique and imported items essential to honoring the culinary traditions of Mexico. Our menu, created by Chef Kelly Wilson, features scratch-made guacamole and salsa, handmade tortilla chips fried in rice oil (the secret to that addictively light and crispy texture) that pairs well with our seasonal margaritas made with fresh-pressed juices, a wide variety of local and imported cervezas, and rotating barrel-aged cocktails.

Our inspiration? The sign at our first Poquitos location in Seattle! The original neon sign was salvaged in South Seattle and originally hung outside of a Mexican restaurant on Greenwood Avenue in Seattle through the early 80’s. The proprietor, pictured on the sign, was known for strolling through the restaurant, serenading his guests and playing guitar as he went. The restaurant also gained notoriety for the tree that grew up through the middle of the dining room. 

Chef Chris Foutz, born in Port Townsend, has been to the far reaches of the PNW (Including some spaces in California) and has been a member of the Yes Parade family since 2017. With over 25 years’ experience spanning multiple states, working with renowned international flavors is a favorite of Chef Chris, as well as providing an avenue that appeals to all palates. At Poquitos, we believe that cuisine is a neutral ground for connecting with anyone from anywhere and any culture.

While Chef Chris and his talented kitchen bring the flavor, General Manager Krys Maldonado brings the energy and laughter. Born and raised in San Diego, CA Krys has spent the last 16 years immersed in his love for restaurants. His focus on a warm and welcoming environment as a foundation for great food and drink is met with a curious wonder from first timers to a repeatedly sought after feeling-of-home for returning guests. Together, our team cultivates an inspirational culture of teamwork, guest service, and community impact.
